As player, I can disable the automatic lock target on enemy in settings

Checked & confirmed there's no configuration for such scenario:

 

Add new option to the battle camera in the game settings: "Automatic lock on enemy"

*This must be enabled/checked by default.

Upon disabled/unchecked, player have to manually lock on enemy by pressing X button (default key for lock & unlock target) or when player is switching target.

Yep, this would be a great feature especially considering the existence of priority target skill.
