HE is your go-to ammunition type for incapitating/disabling enemy modules, including guns. However, if you want to destroy an enemy turret (That is, take it out of the match permanently) you're better off trying AP, but destroying enemy turrets is extremely unlikely in any given circumstance regardless of ammo choice.

Hit the turret barbette (the area where the thing sits on, the tube like thing) and the turret will be knocked out most of the time.
